Holiday Baking


Attention all Snickerdoodle lovers…there is a new doodle you must try! With added sweetness of diced fresh apple and white chocolate chips, Appledoodle is my go-to cookie recipe for the holiday season. These cookies were the perfect addition to our Friendsgiving celebration, and a hit at Brad’s office potluck lunch. Head to the kitchen because soft, chewy apple cinnamon goodness is just a recipe away.

 

Appledoodle Cookies

Ingredients

1½ c. unsalted butter (softened)

¾ c. brown sugar

1 c. sugar

1 tsp. pure vanilla extract

1 large egg

2 c. flour

1 small box vanilla pudding mix (unprepared)*

1 tsp. baking soda

1 tsp. ground cinnamon

¼ tsp. salt

Pinch of nutmeg

1 c. fresh apple (peeled and diced)

1 c. white chocolate chips

Cinnamon Sugar:

⅓ cup sugar

1 tsp. ground cinnamon

*I prefer vanilla, but cheesecake pudding mix is also an option.

Directions

  1. Preheat oven to 350 degrees. Line baking sheets with silicon baking mats or parchment paper.​

  2. In a large bowl, cream together butter and both sugars. Add vanilla and egg mixing until smooth.​

  3. In a medium bowl, whisk together flour, pudding mix, baking soda, cinnamon, salt, and nutmeg. Add the dry ingredients to the wet ones and mix until well combined. Stir in apples and white chocolate chips. See note*

  4. Prepare the Cinnamon Sugar. In a small bowl, combine sugar and cinnamon.

  5. Roll about 2 tablespoons of dough into a ball and coat generously in the Cinnamon Sugar. Place on prepared baking sheet.​

  6. Bake for 10-12 minutes. Allow cookies to cool completely on baking sheet. Store in an airtight container.

I suggest storing the cookies in the refrigerator to keep the apples fresh, and bringing to room temperature just before serving.

*Note: The dough will be really sticky, but manageable. It can be chilled in the refrigerator for 1 hour before baking, but the baked cookies will be thinner, and softer if dough balls are rolled without chilling.
